Prepare Your Whetstone Soak water stones for 5-10 minutes before use Apply honing oil for oil-based stones Place the stone on a stable surface with a damp towel underneath 4. Find the Correct Sharpening Angle Western knives: 15-20° per side Japanese knives: 10-15° per side Use a matchstick or coin as a reference for angle consistency 5. Sharpen Your Knife Step 1: Start with the coarse side of the stone (if using a dual-sided whetstone) Step 2: Place the blade at the correct angle and push it across the stone in a sweeping motion Step 3: Repeat 10-15 times per side, ensuring even sharpening Step 4: Flip to the finer grit side and repeat for a polished edge 6. Hone the Edge Use a honing rod to realign the blade Hold the rod vertically and glide the knife down at the sharpening angle 7. Test Your Edge Paper Test: Slice through a sheet of paper cleanly Tomato Test: A sharp blade should cut through effortlessly Thumb Pad Test: Gently run your thumb across (not along) the edge—should feel slightly rough 8. Clean and Store Properly Wipe the blade with a damp cloth and dry immediately Store in a knife block, sheath, or magnetic strip Avoid dishwashers to prevent damage
